Portions: 2/3 Cup plus 1 Sandwich Bun
30 lb. beef, ground
5 quart (6 lb 8 oz) onions, dry, chopped
5-1/4 quart (12 lb or 1 2/3-No. 10 can) catsup, tomato
2 cups (1 lb) mustard, prepared
3 tablespoon (2 oz) salt
1/3 cups (2 oz) sugar, brown
2 cup vinegar
2 quart water
100 each (13 packages of eight) hamburger buns
Brown beef in its own fat in steam jacketed kettle or roasting pan. Drain or skim off excess fat during cooking period. Combine onions, tomato catsup, mustard, salt, brown sugar, vinegar, and water; add to beef and stir to mix well. Cover; simmer 45 minutes; stir occasionally to prevent burning. Serve on split toasted buns.
NOTE:
1/2 of recipe for “Hamburger Buns” recipe may be used in the place of hamburger
packages.
