Sloppy Joes for 250

50 lbs. ground beef
2 cups finely chopped onions (food processor)
8 cups finely chopped celery
2 (#5) cans tomato soup
10 lbs. or 1-1/2 (#10) cans ketchup
1 cups salt
1-2/3 tablespoons pepper
21 dozen hamburger buns

Pan fry meat (in batches if necessary) and onions. Drain. Combine the rest of the ingredients in a 6 gallon pot. Simmer 1 hour. Serve on buns.

Variation:
Add 1/4 cups dry mustard, 1/2 cups brown sugar and 1 cup vinegar. 1 cup finely diced green pepper or to taste.
