1/3 cup sugar
3 tablespoons tapioca, quick
2-3/4 cup milk
1 large egg, well beaten
1 teaspoon vanilla
Combine all ingredients except vanilla in saucepan; allow to stand for 5 minutes. Cook on medium heat, stirring constantly, until mixture comes to a full boil.

Microwave on high for 10-12 minutes, stirring every 2 minutes, until mixture comes to a full boil.
Remove from heat; add vanilla. Cool for 20 minutes; stir. Pour into serving dishes, then chill or serve warm.
