375 ml flour 1 1/2 cup
5 ml baking powder 1 tsp
5 ml baking soda 1 tsp
2 ml salt 1/2 tsp
2 ml cinnamon 1/2 tsp
1 ml nutmeg 1/4 tsp
1 ml ginger 1/4 tsp
.5 ml allspice 1/8 tsp
175 ml sugar 3/4 cup
1 egg
125 ml buttermilk 1/2 cup
50 ml vegetable oil 1/4 cup
2 ml vanilla 1/2 tsp
398 ml can crushed pineapple, drained 14 oz
175 ml carrots, finely grated 3/4 cup
125 ml raisins 1/2 cup
In a large mixing bowl; stir flour together with baking powder, baking soda, salt, spices and sugar.
Whisk egg in a medium size bowl with buttermilk, oil and vanilla. Stir in pineapple. Pour into flour mixture and stir until just combined. Stir in carrots and raisins. Spoon batter into lightly greased 12 muffin cups. Bake in preheated 400 F (200 C) oven for 15 to 17 minutes or until a toothpick comes out clean.
