Strawberry Bread

3 cups bread flour
1 teaspoon ground cinnamon
2 cups sugar
4 eggs, beaten
1 teaspoon baking soda
1-1/4 cups vegetable oil
1 teaspoon salt
1-1/4 lb strawberries, thawed and chopped

Combine first 5 ingredients in a large bowl; make a well in center of mixture. Combine remaining ingredients; add to the dry ingredients, stirring until well combined. Spoon mixture into 2 greased and floured 9 x 5 x 3 loaf pans. Bake at 350F for 1 hour. Cool in pans about 10 minutes; remove from pans, and let cool completely on wire racks.

Yield: 2 loaves.
