Chicken & Potato Hash

500 g potatoes 1 lb
20 ml vegetable oil 1 1/2 tbsp
1 onion, chopped
1 green pepper, seeded & chopped
1 red pepper, seeded & chopped
250 ml chicken, skinless, cooked & diced 1 cup
1 garlic clove, crushed
5 ml paprika 1 tsp
2 ml dried thyme 1/2 tsp

salt & pepper

Cook potatoes in saucepan of boiling water for 20 to 25 minutes or until tender. Drain, allow to cool, then dice into small pieces.

In large skillet; heat oil over medium heat. Add onion and saute for 4 minutes or until slightly softened. Add green and red peppers. Cook for 4 to 5 minutes.
Stir in diced potato and cook for 5 minutes or until golden brown. Add chicken and garlic. Sprinkle with paprika, thyme, salt and pepper to taste.

Cook until mixture is crispy and brown on the outside.
