Potato Stuffing

30 ml butter 2 tbsp
1 medium onion, chopped
1 celery rib, chopped
500 ml potatoes, cooked & mashed 2 cup
750 ml stale bread, cubed 3 cup
30 ml summer savoury 2 tbsp
2 ml poultry seasoning 1/2 tsp
salt & pepper to taste

In large skillet, melt butter. Saute onion and celery until softened.

In a large bowl; combine onion and celery, along with potatoes, bread, summer savoury, poultry seasoning, salt and pepper.

Stuff poultry and cook according to bird size. For individual servings, cook in greased muffin tins, covered with tin foil for 15 minutes. Uncover for 5 additional minutes of cooking.
