1/4 cup chopped onion
1/4 cup vegetable oil
2 TBS. rice wine vinegar
1 TBS. water
1 TBS. chopped ginger root
1 TBS. chopped celery
1 TBS. soy sauce
1-1/2 teaspoon tomato paste
1-1/2 teaspoon granulated sugar
1 teaspoon lemon juice
1/2 teaspoon salt
Combine all ingredients in a blender. Process until almost smooth. Any unused dressing needs to be stored in a closed container in the refrigerator.
Makes about 6 servings.
