1 kg prawns (about 12 pieces, shelled with tails on and deveined)
1 tablespoon minced garlic
1 tablespoon minced onion
1 tablespoon ginger, thinly sliced
2 cups thin coconut milk
1/2 cup thick coconut milk
2 stalks lemon grass, white parts pounded
1 cup Buko (young coconut) meat, scalloped
6 hot chili peppers
2 tablespoon cooking oil patis and pepper to taste
Sauti garlic, onion and ginger in oil. Add two cups thin coconut milk and lemon grass. Bring to the boil Add prawns, cover and simmer for 10 minutes. Remove prawns. Add thick coconut milk, reduce heat, stir constantly. Add buko meat and chili peppers. Simmer for about 3 minutes, return prawns and allow to boil for two minutes. Discard lemon grass. Season with patis and pepper to taste.
Serve hot.
