2 cups sifted all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 egg
3/4 cup whole milk
1-1/4 cups brown sugar
1/4 cup salad oil
2 squares (1 ounce each) semi-sweet chocolate, melted
1/4 cup chopped walnuts
1/4 cup maraschino cherries, drained
Preheat oven to 350 deg. F. Sift then measure flour; resift with baking powder and salt into mixing bowl. Add egg, milk and brown sugar; mix well. Stir in oil and melted chocolate until blended. Add nuts and cherries. Turn into greased 9×5-inch loaf pan. Bake 60 minutes or until loaf tests done. Leave in pan on wire rack 10 minutes. Remove from pan. When completely cold, wrap and store.
