Butter 1 lb.
Kosher salt 3 Tbsp.
Black pepper 3 Tbsp.
White pepper 1 Tbsp.
Cayenne 2 Tbsp.
Turkey 1
Seasoning Mix (recipe follows) 3/4 cup
Peanut oil 5 gallons
Melt butter in saucepan over low heat. Stir in salt, peppers and cayenne. Remove mixture from heat and cool to about 100F. Pour into meat injector needle. Inject butter mixture into turkey breast and legs.
Pat turkey dry. Rub inside and outside of turkey with half of seasoning mix.
Add oil to a 10-gallon pot. Heat the oil over medium-high heat to 325F. Wearing oven mitts and long sleeves, carefully lower turkey into oil. Cook turkey about 3 minutes per pound (about 35-42 minutes for a 10- to-12 pound turkey).
Once turkey reaches an internal temperature of 170F, carefully remove from oil, drain, let sit 20 minutes. Sprinkle with remaining seasoning mix before carving.
Seasoning Mix
Yield: 3/4 cup
Kosher salt 8 Tbsp.
Garlic pepper 8 Tbsp.
White pepper 8 Tbsp.
Cayenne pepper 2 tsp.
Onion powder 1 tsp.
Combine all ingredients. Mixture also can be used to season other meat or poultry items.
