ChocCuc Cake

625 ml all purpose flour 2 1/2 cup
175 ml cocoa 3/4 cup
12 ml baking powder 2 1/2 tsp
7 ml baking soda 1 1/2 tsp
5 ml salt 1 tsp
5 ml cinnamon 1 tsp
175 ml soft margarine 3/4 cup
500 ml sugar 2 cup
3 eggs
10 ml vanilla 2 tsp
10 ml orange peel, grated 2 tsp
500 ml cucumber, unpeeled & coarsely shredded 2 cup
125 ml milk 1/2 cup
250 ml nuts, chopped 1 cup

In a medium bowl; combine flour, cocoa, baking powder, baking soda, salt and cinnamon. Set aside.

In another medium bowl; using mixer, beat margarine and sugar until blended smoothly. Add eggs one at a time, beating after each addition. Fold in vanilla, orange peel and cucumber.

Alternately stir in dry ingredients and milk. Add nuts. Pour batter into lightly greased and floured 10 inch (25.5 cm) bundt pan. Bake in preheated 350 F (180 C) oven for one hour or until cake tester comes out clean. Cool in pan 15 minutes, turn out on wire rack and cool completely. Frost with favorite icing or drizzle with favorite glaze.
