Salt Pudding

2 tablespoons butter
2 cups milk
1/3 cup sugar
3 tablespoons cornstarch
1/2 cup Sea Salt (1/4 cup of table salt can be substituted)
1/2 teaspoon vanilla

Heat butter and 1 1/2 cup milk. In a separate bowl, mix together the sugar, cornstarch, salt, and 1/2 cup milk. Pour, stirring constantly, into hot milk mixture. Blend thoroughly. Cook for 5-10 minutes, stirring constantly, until thick. Remove from heat, add vanilla, and chill.

Makes four servings.

Garnish with mint sprig.
