Tomato Pudding

3 cups soft bread cubes
1/3 cup butter or margarine
1-1/2 cups water
2 (6 ounces) cans tomato paste
1/2 teaspoon salt
dash of pepper
1 cup brown sugar

Toast bread cubes in butter until lightly browned. Combine brown sugar, water, tomato paste, salt and pepper. Simmer 5 minutes. Combine bread cubes and tomato mixture and pour into greased 1-quart casserole. Bake, uncovered, at 350 degrees for 1 hour and 30 minutes. You may substitute 2 cups puree and reduce water to 1/2 cup.
