Fishy Potatoes

4 large potatoes, baked
2 cans tuna, drained
175 ml mayonnaise 3/4 cup
125 ml cheddar cheese, grated 1/2 cup
50 ml green pepper, chopped 1/4 cup
50 ml green onions, chopped 1/4 cup
1 egg white
30 ml cheddar cheese, grated 2 tbsp

Scoop potatoes from skins.

In a medium bowl; mash scooped potatoes, tuna, 1/2 cup (125 ml) mayonnaise, 1/2 cup (125 ml) cheese, peppers and green onions. Stir until well combined. Spoon back into potato skins. Bake in preheated 400 F (200 C) oven for 10 minutes.

In a small bowl, using a mixer, beat egg white until stiff peaks form; fold in remaining mayonnaise and 2 tablespoon cheddar cheese. Spoon evenly over stuffed potatoes. Bake an additional 10 minutes.
