Potato and Cucumber Salad

6 medium potatoes, cooked & sliced
1 cucumber, sliced
125 ml vegetable oil
125 ml vinegar
2 ml sugar
– salt & pepper –
2 green onion, chopped

In a medium bowl: add cucumber slices and salt. Toss with fork and let stand.
In a small bowl; mix oil, vinegar, sugar, salt and pepper.

While potatoes are still hot; pour dressing over. Add green onions and gently mix together.

Squeeze liquid out of cucumbers. Add cucumbers to the potato mixture. Combine well.

Serve at room temperature.
