750 g chicken breast, ground
2 eggs, beaten
2 small onions, finely chopped
500 ml fresh breadcrumbs
30 ml parmesan cheese, shredded
30 ml fresh parsley, finely chopped
– salt & pepper to taste
In a large bowl; combine ground chicken, eggs, onion, breadcrumbs, cheese, parsley, salt and pepper. Mix well. Spoon equally into muffin pan. Bake in preheated 350 F (180 C) oven for 25 to 30 minutes or until cooked throughout.
