675 ml sweet potatoes, diced 2 3/4 cup
50 ml butter 4 tbsp
15 ml lemon juice 1 tbsp
1 garlic clove, crushed
1 red bell pepper, seeded & diced
1 green bell pepper, seeded & diced
2 bananas, thickly sliced (firm & slightly underripe)
2 thick slices white bread, crusts removed & diced
salt & pepper to taste
DRESSING
30 ml liquid honey 2 tbsp
30 ml chives, chopped 2 tbsp
30 ml lemon juice 2 tbsp
30 ml olive oil 2 tbsp
Cook sweet potatoes in pan of boiling water for 10 to 15 minutes, until tender. Drain thoroughly.
Meanwhile, melt butter in skillet. Add lemon juice, garlic, peppers and cook stirring constantly for 3 minutes.
Add banana slices and cook for 1 minute. Remove bananas and stir into potatoes.
Add bread cubes to skillet and cook, stirring frequently, for 2 minutes until they are golden brown on all sides.
DRESSING: Mix ingredients in a small pan and heat for 1 or 2 minutes.
Spoon potato mixture into serving dish and season to taste with salt and pepper. Pour dressing and sprinkle croutons on top.
