Cappuccino Caramels

Aluminum foil
1 tablespoon butter
1 cup butter
2 1/2 cups firmly packed brown sugar
1 (14-ounce) can sweetened condensed milk
1 cup light corn syrup
3 tablespoons instant coffee powder
1/2 teaspoon grated orange peel
1 cup chopped walnuts
1 teaspoon vanilla extract

Line an 8-inch baking pan with aluminum foil, extending the foil over the edges of the pan. Grease the aluminum foil with butter.

Melt butter in a heavy saucepan over low heat. Stir in brown sugar, sweetened condensed milk, light corn syrup, instant coffee powder, and grated orange peel. Cook to the soft ball stage when tested in cold water. Remove from the heat and stir in chopped walnuts and vanilla.

Pour into the prepared pan and cool until firm before cutting into 1-inch squares.
