Tangerine Muffins

2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup plain yogurt
1/4 cup butter or margarine, melted
1 large egg
1 tablespoon grated tangerine peel
1 cup diced tangerine

In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt. Set aside.

In a medium bowl, stir together yogurt, melted margarine, egg, grated tangerine peel, and diced tangerines. Pour tangerine mixture into flour mixture and stir just until combined. Spoon the batter into a greased muffin tins, filling two-thirds full.

Bake in 400°F. oven for 18 to 20 minutes, or until lightly browned. Cool for 5 minutes before removing to a wire rack to finish cooling.

Makes 1 dozen muffins.
