Lemon Caper Mayo

4 1/2 cups mayonnaise
3/4 cup capers, minced
1/3 cup dijon-style mustard
1/3 cup parsley, chopped
3 Tbsp. fresh lemon juice
1 1/2 Tbsp. caper juice
1 1/2 Tbsp. sugar
3/4 tsp. cracked black pepper

To make Lemon-Caper Mayo, in bowl, mix all ingredients to blend thoroughly. Cover and refrigerate at least 2 hours before using.

Makes about 6 cups.
