Manitoba Antipasto

375 ml carrots, chopped 1 1/2 cup
250 ml green pepper, chopped 1 cup
375 ml cauliflower, chopped 1 1/2 cup
250 ml mushrooms, quartered 1 cup
250 ml sweet pickles, chopped 1 cup
125 ml onion, chopped 1/2 cup
125 ml green olives, chopped 1/2 cup
125 ml black olives, chopped 1/2 cup
250 ml celery, chopped 1 cup
125 ml marinated artichoke hearts, chopped 1/2 cup
213 ml can tomato sauce 7-1/2 oz
125 ml ketchup 1/2 cup
50 ml olive oil 1/4 cup
184 g can tuna, drained 6 1/3 oz

In a large saucepan; combine all ingredients except tuna. Simmer over low heat for 20 to 30 minutes. Add tuna and simmer 5 minutes longer. Refrigerate in airtight container.
