Spring Salad

SALAD
1 head Romaine, torn into bite size pieces
125 ml cucumber, thinly sliced 1/2 cup
50 ml daikon, trimmed & sliced 1/4 cup
1/2 red onion, thinly sliced 1/2
250 ml croutons 1 cup

DRESSING
75 ml olive oil 1/3 cup
25 ml vinegar 2 tbsp
25 ml dijon mustard 2 tbsp
25 mL honey 2 tbsp
1 garlic clove, minced
pepper

In salad bowl; combine all salad ingredients except croutons. Toss. Combine dressing ingredients. Just before serving; pour dressing over salad. Sprinkle with croutons.

Serves 6
