2 cups cubed cooked chicken
1/2 cup chopped red bell pepper
1/2 cup chopped cucumber
1/2 cup shredded mozzarella cheese
1/4 cup mayonnaise or salad dressing
1/2 teaspoon dried oregano leaves
1 (4 oz.) can chopped ripe olives, drained
1 baguette 14 to 16 inches long (or French bread slightly hollowed)
Cut bread inhalf horizontally. Set oven to broil. Mix all ingredients and spoon about 1-1/2 cups mixture onto each bread half. Place on ungreased baking sheet. Broil with tops 4 to 6 inches from heat, about 5 minutes or until hot. Cut each half into 3 slices and serve.
