250 ml cheddar cheese, grated 1 cup
500 ml potaotes, peeled, finely diced & cooked 2 cup
250 ml biscuit mix 1 cup
75 ml vegetable oil 1/3 cup
125 ml green onions, chopped 1/2 cup
125 ml cooked ham, diced 1/2 cup
15 ml fresh parsley, chopped 1 tbsp
4 eggs, whisked
salt & pepper to taste
Generously butter a 9 inch (23 cm) pie plate. Combine cheese, potatoes, biscuit mix, vegetable oil, green onions, ham and parsley in medium bowl. Stir to combine. Add eggs and salt and pepper. Stir again to combine. Pour into prepared dish. Bake at 375 F (190 C) until set, about 40 minutes. Cut into wedges and serve immediately.
