Pavlova

4 egg white
1-1/4 cups sugar
1/4 teaspoon salt
3 tablespoons water
1 tablespoon cornstarch
1 teaspoon vanilla
1 teaspoon vinegar
2 cups whipping cream, whipped but NOT sweetened
assorted fruit
(we like a combination of peaches, strawberries, and blackberries or raspberries)

Serving Size : 6

Grease and flour springform pan. Beat eggs to soft peaks. Add sugar and salt; beat until well blended. Beat in cornstarch, then vanilla and vinegar. Beat to stiff glossy peaks. Turn into pan. Bake 15 minutes at 350F; reduce to 175F and bake 1 hour more, or until risen. Cool COMPLETELY; remove from pan. Top with whipped cream and fruit.
