30 ml canola oil 2 tbsp
3 cloves garlic, chopped
250 ml onion, chopped 1 cup
1 red pepper, seeded & chopped
4 medium cucumbers, peeled, seeded & coarsely chopped
500 ml ripe tomatoes, chopped 2 cup
1 ml sugar 1/4 tsp
salt & pepper
5 ml fresh lime juice 1 tsp
50 ml scallions, chopped 1/4 cup
In a large saucepan; heat oil over medium heat. Add garlic, onion and red pepper,. Saute until just tender. Add cucumber, tomatoes, sugar, salt and pepper to taste. Stir well. Bring to a simmer and cook until cucumbers are just translucent. Add lime juice and scallions. Serve as a side dish or over cooked rice.
