Brandied Fruits

1 cup of canned pineapple chunks, drained
1 cup sliced canned peaches, drained
1 cup maraschino cherries, drained
3 cups sugar.

Into an eight cup jar add 1 cup of canned pineapple chunks and 1 cup sugar. Shake gently or stir with a wooden spoon to cover the pineapple with the sugar. Do not refrigerate.

Two weeks later add 1 cup sliced canned peaches, cut in half, and add 1 cup sugar. Stir with a wooden spoon to dissolve the sugar. Two weeks later add 1 cup maraschino cherries, cut in half, and 1 cup sugar. Mother Nature now takes over and you have a fermented (or brandied) fruit.

When the jar is full, start another and give one to your best friend (or a relative that you may like). It is wonderful on pound cake (a favorite of mine) or ice cream. Do not refrigerate.
