5 large potatoes, finely grated
3 medium carrots, finely grated
1 large onion, finely diced
75 ml matzo meal 1/3 cup
5 ml baking powder 1 tsp
3 eggs, separated
1 ml tabasco sauce 1/4 tsp
50 ml vegetable oil 1/4 cup
Combine vegetables; drain off any liquid. Combine matzo meal, baking powder and stir into vegetables. Beat egg yolks and tabasco sauce until light; stir into vegetable mixture. Stir oil into mixture. Fold in stiffly beaten egg whites. Spoon into a greased shallow 9 x 9 inch (23 x 23 cm) baking dish. Bake at 375 F (190 C) for 1 1/4 hours, until golden. Let rest 10 minutes before serving.
