1-1/2 Cups All Purpose Flour
1-1/2 Teaspoons Baking Powder
1/4 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/2 Cup Butter, softened
3/4 Cup Sugar
2 Eggs, separated
Grated Peel Of 1 Large Orange
1/2 Cup Orange Juice
1 Cup Chopped Walnuts
ORANGE GLAZE:
1/4 Cup Orange Juice
1/4 Cup Powdered Sugar
Preheat oven to 350. Grease an 8-1/2 x 4-1/2 inch loaf pan.
In a small bowl, stir together flour, baking powder, soda and salt. In a medium bowl, beat butter and sugar together until fluffy. Add egg yolks one at a time, beating after each addition. Add grated orange peel. Add flour mixture and 1/2 cup orange juice alternately, stirring to blend.
In a small bowl, beat egg whites until stiff. Gently fold in egg whites and walnuts. Pour batter into prepared pan. Bake 50-60 minutes or until a wooden pick inserted in the center of loaf comes out clean.
Prepare glaze and spoon over loaf as soon as it comes out of the oven. Cool in pan on a wire rack 10 minutes. Remove bread from pan. Cool completely on rack before slicing.
Makes 1 loaf.
Orange Glaze:
In a small bowl, combine 1/4 cup orange juice and powdered sugar.
