Take some big apples, not too ripe, peel them and remove the core. Cut them in slices about 1 centimeter thick. Prepare a batter with the following ingredients:
100 gr. of flour
1 spoon of grappa
1 egg yolk
salt and some cold water.
Let the batter stand for many hours. Add the egg white, which has to be whisked until stiff, dip the slices of apple in this mixture and fry them in abundant oil. Then sprinkle with sugar.
