2 cups flour
1 cup crushed pineapple, undrained
4 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons melted shortening
1/2 cup sugar
1 egg, slightly beaten
Sift together flour, baking powder, salt and sugar. Add slightly beaten egg and pineapple. Blend in shortening. Fill greased muffin pans two-thirds full. Bake in moderately hot oven (375 degrees F.) 20 minutes.
Makes 12 muffins.
