Biscotti

1/2 cup coarsely chopped almonds
3/4 cup sugar
2 teaspoon anise extract
2 teaspoon orange zest
1-1/2 teaspoon baking powder
1/3 cup butter or margarine
2 eggs
2-1/4 cup flour
1/4 teaspoon salt

Cream butter or margarine and sugar together until light and fluffy. Beat in eggs, anise flavor and orange zest. Combine flour, baking powder and salt in a bowl. Add to butter/sugar mixture. Add almonds. Grease baking sheet. Form dough into two logs about 2″ x 12″ and place on sheet. Bake at 350o for about 25 minutes or until golden brown. Let cool 5 minutes before slicing (use bread knife) about 1/2″ thick. Lay slices back on baking sheet and bake for another 10 minutes per cut side.

Yields approx. 3-1/2 dozen.
