1/4 cup vegetable oil
3 boneless skinless chicken breasts, halved
8 ounces mozzarella cheese
1 envelope Lipton Onion Soup Mix
3/4 cup dry bread crumbs
2 eggs, beaten
Preheat oven to 425 F. In large baking dish, pour oil and heat in oven 10 minutes. Meanwhile, pound chicken to 1/8 inch thickness, then slice cheese into six 1/2-inch slices. In wide shallow bowl, combine recipe soup mix with bread crumbs. Place one cheese slice on each chicken piece. Fold edges of chicken over cheese to enclose completely. Dip chicken bundles in eggs, then bread crumb mixture, coating well. Add bundles to baking dish; oven-fry 25 minutes, turning once. Serve, if desired, with your favorite tomato sauce.
