Asian Lettuce Wraps
250 ml water 1 cup
250 ml green onions, chopped 1 cup
250 ml red pepper, sliced 1 cup
250 ml brown rice 1 cup
250 ml carrots, shredded 1 cup
250 ml radishes, thinly sliced 1 cup
500 g ground turkey 1 lb
15 ml light soy sauce 1 tbsp
5 ml garlic, minced 1 tsp
10 ml gingerroot, minced 2 tsp
16 lettuce leaves 16
75 ml light soy sauce 1/3 cup
75 ml water 1/3 cup
40 ml fresh lemon juice 3 tbsp
10 ml garlic, minced 2 tsp
15 ml gingerroot, minced 1 tbsp
5 ml sugar 1 tsp
In a medium bowl; mix together turkey, soy sauce, garlic and ginger. Form into 16 meatballs and roll into ovals. Cover and refrigerate.
In a medium saucepan, over medium heat, combine rice with 2 cups (500 ml) water. Bring to boil. Reduce heat and simmer for 20 minutes or until rice is tender.
Arrange rice, lettuce leaves, carrots, radishes and peppers onto serving plate.
In medium bowl; mix soy sauce, water, lemon juice, garlic, ginger and sugar. Divide into 4 small dipping bowls.
Thread meat balls onto skewer. Broil under preheated broiler for 10 to 12 minutes, turning occasionally to brown all sides.
Spoon rice, meat roll and veggies onto lettuce leaf. Roll up and dip in dipping sauce.
