Black Bean and Spiced Mango Sa

Bush’s Best® Easy Entrées® Taco Fiesta Black Beans are accented with mango, queso fresco, avocado, and peppers in this salad finished with a spicy chili-lime vinaigrette.

Bush's Best® Easy Entrées® Taco Fiesta Black Beans 1, #10 can
Romaine lettuce, shredded 15 cups
Purple cabbage, shredded 7 1/2 cups
Chili-lime vinaigrette, see sub recipe 2 cups
Tri-color bell pepper mix, small diced 2 cups
Green onion, sliced 3 3/4 cups
Grape tomatoes, halved 3 3/4 cups
Avocado, small dice 15 oz
Green onion, sliced 3 3/4 cups
Yellow onion, small dice 7 1/2 oz
Queso fresco, crumbled 3 3/4 oz
Yellow onion, small dice 7 1/2 oz
Mango, seasoned with 2 tsp tajin, med dice 3 3/4 cups
Tajin seasoning (or similar chili seasoning blend) 1/2 cup
Cilantro, fresh 1 cup

Classic oil and vinegar vinaigrette 2 cups
Lime juice 2 Tbsp
Lime zest 2 limes
Smoked paprika 1 tsp
Mexican chili powder 2 tsp
Cholula hot sauce 4 Tbsp
Garlic, minced 2 tsp

For dressing, combine all ingredients and whisk until incorporated. Hold refrigerated until use.

Combine shredded romaine lettuce, shredded purple cabbage, and season with the Chili-Lime Vinaigrette. Plate 1 1/2 cups on an entrée sized dish.

Combine the Taco Fiesta Black Beans, bell pepper, green onion, and grape tomatoes, and mix. Top 1 1/4 cup of the black bean mix over the seasoned lettuce and cabbage.

Top each dish with 1 oz diced avocado, 1/2 oz onion, 1/4 oz queso fresco, and 1/4 cup Tajin seasoned mango pieces, then garnish with a pinch of fresh cilantro leaves before serving.
