Sweet & Sour Lobster

4 lobsters, tails straightened until fully extended and firmly secured to lobster boards
35g lemon or lime juice
70g acacia honey
150ml olive oil
Poach the lobsters in a pot of boiling water for about 6 minutes, then drain well. Remove the claws from the poached lobsters and reserve the meat. Cut the poached lobsters in half lengthwise, and carefully remove the body organs. Place the poached lobster halves into the refrigerator and keep chill.
Whisk the lemon juice and acacia honey in a mixing bowl. Gradually add in the olive oil and whisk until emulsified. Set aside the sweet and sour sauce.
Place a chilled lobster shell onto each serving and add in the chilled lobster claw meat. Drizzle the sweet and sour sauce over the lobster claw meat.
