Maple Squash Slices

2 acorn squash
1 cup plus 2 tablespoons water, divided use
1/3 cup real maple syrup
1 tablespoon butter or margarine
1/4 teaspoon salt and freshly ground pepper

Wash squash. Cut in half lengthwise; remove and discard the seeds and membrane. Cut each half crosswise into 1/2 inch slices; discard ends. Place slices in a large skillet. Add 1 cup water; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until tender.

Meanwhile, heat maple syrup in a small pan until warm. Do not boil. Remove from the heat; Carefully add the butter or margarine, and salt. Cook and stir over low heat until butter melts.

Place squash slices on a serving plate and top with the syrup.

Makes 4 servings.
