Espresso Almond Cookies

CREAM:
1 cup soft butter
3/4 cup brown sugar

ADD:
4-1/2 teaspoons instant espresso coffee
1/2 teaspoon salt
1/4 teaspoon almond extract

COMBINE AND ADD TO CREAM MIXTURE:
1 cup finely chopped almonds
1/2 cup semi-sweet chocolate chips

ADD:
2 cups whole wheat pastry flour

Roll into a log. Slice into 24 rounds. Flatten cookies before baking. Bake at 350 degrees for 15 minutes.
