Pumpkin Bread with Cinnamon

3-1/2 cups sifted bread flour
1-1/2 cups light brown sugar, packed
1-1/2 cups sugar
2 teaspoons baking soda
1-1/2 teaspoons salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
4 large eggs, beaten
1 cup vegetable oil
2/3 cup water
2 cups canned pumpkin
1 cup raisins
1 cup chopped walnuts (optional)

Preheat the oven to 375F.

Grease 3, 8-1/2 x 4-1/2-inch loaf pans, sprinkling a little brown sugar in each. Combine all the dry ingredients in a large bowl. Beat eggs and add with vegetable oil, water and pumpkin. Beat thoroughly until well mixed, add the raisins and nuts (if desired). Pour into prepared pans. Bake 1 hour and 15 minutes or until a toothpick comes out clean. Cool for in the pans before turning onto wire racks to cool.
