4 salmon fillets
1 red pepper, chopped
1 green pepper, chopped
1 red onion, chopped
500 ml fresh spinach, chopped 2 cup
75 ml bottled sundried tomato & oregano dressing 1/3 cup
Season salmon fillets with salt and pepper. Place skin side down in 9 inch x 13 inch (23 x 33 cm) lightly greased baking dish.
In a large bowl; mix peppers, onion and spinach. Add dressing and mix until well blended. Spread mixture on top of salmon and bake in preheated 375 F (190 C) oven for 20 to 25 minutes.
