3 eggs, separated
750 ml potatoes, cooked & mashed 3 cup
15 ml onion, minced 1 tbsp
10 ml parsley 2 tsp
salt & pepper to taste
In a medium bowl; beat egg yolks. Add potatoes, onion and seasonings.
In a small bowl; beat egg whites until stiff. Fold into potato mixture. Pour into greased muffin tins or a casserole dish.
Bake in preheated 350 F (180 C) oven until slightly brown.
