15 ml oil 1 tbsp
1 medium onion, minced
5 potatoes, peeled & cubed
1 medium rutabaga, peeled & cubed
50 ml milk 1/4 cup
40 ml butter or margarine 3 tbsp
375 ml cheddar cheese, grated 1 1/2 cup
1 pie shell, baked (9 in / 23 cm)
In a small skillet; heat oil. Add onion and saute until slightly transparent; set aside.
In a large pan; cook potatoes and rutabaga until tender. Drain well.
Add milk and butter to potato mixture and mix well. Add onions and 1 1/4 cups (300 ml) of cheese; blending well.
Pour potato mixture into baked pie shell. Sprinkle with remaining cheese. Place under broiler until cheese melts and the top is golden brown.
