Beef with Apples and Sweet Pot

1 kg stewing beef 2 lb
1 large sweet potato, cubed
2 small onion, chopped
2 apples, chopped
125 ml beef broth 1/2 cup
2 garlic, minced
5 ml salt 1 tsp
5 ml dried thyme divided 1 tsp
3 ml black pepper, divided 3/4 tsp
15 ml cornstarch 1 tbsp
1 ml ground cinnamon 1/4 tsp
30 ml cold water 2 tbsp

Place stewing meat, sweet potato, onion, apples, broth, garlic, salt, 1/2 teaspoon (2 ml) thyme and 1/2 teaspoon (2 ml) pepper in slow cooker. Cover and cook on low 8 to 9 hours.

Transfer beef, sweet potato and apples to platter. Cover with foil to keep warm.

Stir together cornstarch, remaining thyme, remaining pepper, cinnamon and water until smooth. Stir into cooking liquid. Cook 15 minutes on high or until is thickened. Serve sauce with beef, sweet potatoes and apples.
