Cod 350 g, fillet, finely diced
Shallot 1, finely chopped
Sesame seeds 2 tbsp, plus 1 tsp light-coloured
Olive oil 1 tsp
Lemon 1, unwaxed, zest and juice
Shoots to garnish
Bread multi-grain, to serve
Mix together the fish, shallot, sesame seeds, oil and 1/2 tsp of lemon zest.
Season to taste with lemon juice, sea salt and ground black pepper.
Press the cod mixture into a teacup and turn out onto a plate.
Garnish with the shoots and a wedge of lemon.
Serve with toast, for example.
