Creamy Cheesy Broccoli Soup
375 ml broccoli, chopped 1 1/2 cup
50 ml celery, diced 1/4 cup
50 ml onion, chopped 1/4 cup
250 ml chicken broth 1 cup
500 ml milk 2 cup
30 ml cornstarch 2 tbsp
1 ml salt 1/4 tsp
dash pepper & ground thyme
50 ml swiss cheese, grated 1/4 cup

Place vegetables and broth in saucepan. Bring to boil, reduce heat, cover and cook until vegetables are tender. Mix milk, cornstarch, salt, pepper and thyme; add to cooked vegetables. Cook stirring constantly until soup is slightly thick and mixture just begins to boil. Remove from heat. Add cheese and stir until melted.
