2 (10-ounce) packages frozen black-eyed peas
1 medium green pepper, chopped
1 small onion, chopped
3 tablespoons bacon drippings
1 (7 1/2-ounce) can whole tomatoes, undrained and chopped
1/2 teaspoon salt
1/4 teaspoon pepper

Cook black-eyed peas according to package directions; drain well, and set aside.

Saute green pepper and onion in bacon drippings until tender. Add peas, tomatoes, salt and pepper; cook over low heat until thoroughly heated, stirring often.


Makes 6 servings.
