Asian Pork Meatloaf with Zucchini  Meatloaf  293 reads

canola oil for frying
15 ml garlic, minced 1 tbsp
15 ml ginger, minced 1 tbsp
15 ml fermented black beans, rinsed & chopped 1 tbsp
3 carrots, diced
4 celery stalks, diced
2 onions, diced
1 zucchini, diced
125 ml hoisin sauce 1/2 cup
500 ml long grain rice, cooked 2 cup
1 kg ground pork 2 lb
4 eggs, lightly beaten
salt & pepper to taste

In a large saute pan; heat oil, add garlic, ginger and black beans. Stir. Add carrots, celery, onions, zucchini and stir. Add hoisin sauce and continue to stir. Remove from heat and cool. When mixture is cooled, stir in rice, pork and eggs. Season with salt and pepper. Place in greased loaf pan. Bake in preheated 350 F (180 C) oven for 45 to 50 minutes or until done.
