Bread and Butter Pudding  Dessert  292 reads

Butter for greasing
5 slices white bread, crusts removed, thinly spread with butter.
1/2 cup raisins
2 pcs lemon rind
2 tablespoon white sugar
3 med eggs at room temp.
2 cups milk
1 tablespoon brown sugar

Oven 425F

Grease a 6-cup round baking dish with butter. Layer bread and raisins, reserving enough raisins to sprinkle on top. Slide lemon rind down opposite sides of the dish. Whip eggs and white sugar with balloon whisk. Add milk and mix well.

Pour over bread, pushing down on the bread so it gets soaked. Sprinkle brown sugar on top.

Bake for 30 minutes until pudding has risen and top is crusty and golden brown.
