Cinnamon stick 1
Sugar to taste
Water 2 liters
Place rice, cinnamon stick and 1 liter (1 quart) of water in a blender. Puree.
Pour the rice mixture into a bowl. Add 1 more liter of water. Cover and let sit overnight.
Working in small batches, puree the rice mixture in the blender.
Strain the horchata, add sugar to taste, and refrigerate. Serve chilled over ice. Garnish with ground cinnamon.
